The Brenizer technique gives you a wide field of view while providing telephoto bokeh similar to medium format. For the demo photo, he does in this video he uses 24 photos for the Brenizer Technique starting with a safety photo of a decent composition and including photos from all around the subject that is later stitched together and then cropped in Lightroom.
